Ingredients (5 servings)
250 g split peas -- 1 dry onion, whole -- 4 dry onions cut into fine frames -- 10 TB olive oil -- Juice of two lemons -- Salt and pepper
We put the split peas in a moderate pot with 1 liter of water. Once it boils, we lower the fire and for the first 10 minutes scrape it thoroughly.
Then we add the whole onion, and we let the peas simmer, stirring occasionally, for 40 minutes or until they are softened, having absorbed all water. When it is ready, we pour salt, pepper, two tablespoons of oil and the lemon juice. We stir well until it becomes puree.
For each serving we add a lot of chopped onion covering its surface along with 2 tablespoons of olive oil. We can enjoy it with octopus or salted fish, and of course with whole wheat bread, and wine.
