Ingredients (5 servings)
300 g lentils -- 30 g extra virgin olive oil -- 500 ml chopped tomatoes -- 1 large onion -- 3 cloves of garlic -- 1 TB. fresh ginger -- 3 carrots cleaned -- 1 liter of water -- Salt -- Pepper
Grate the ginger, onion and garlic and put them in a saucepan. Cut the carrots into thin slices, and add them. Finally, add the lentils, water, tomatoes, salt and pepper. Let them simmer for 30 minutes or until lentils soften.
Serve with any salad you like, salted fish, whole wheat bread, and wine or beer.
